Quick Bean Salad

1 jar of Jovial Borlotti beans or a similar product

8 cherry tomatoes, halved

½ medium avocado

2-3 tbsp chopped green onions

2 tbsp parmesan cheese

 

Balsamic Dressing

1 tbsp balsamic vinegar

1 tbsp extra virgin olive oil

1 tsp spicy brown mustard or Dijon mustard

¼ tsp garlic powder

Salt and pepper to taste

 

1.       Drain and rinse the beans and pat dry. Add to a large bowl.

2.       Halve your tomatoes and dice your avocado and add to the bowl.

3.       Use scissors to easily cut your green onion into your bowl. Stir the ingredients together.

4.       Make your dressing by combining all the ingredients in a small bowl.

5.       Add the dressing to your salad and toss. Add the parmesan cheese and enjoy!
