Ground Chicken & Veggie Asian Inspired Noodles
Sauce
3 tbsp of soy sauce
2 ½ tbsp of stir fry sauce or similar (I like the Whole Foods 365 brand stir fry sauce)
1 ½ tbsp of mirin
1 tbsp of honey
1 tsp of rice wine vinegar
A few pinches of red pepper flakes and sesame seeds
Optional but recommended - I like to add 1-2 tsp each of fresh grated ginger and garlic but you could also add dried garlic and/or ginger powder or omit
1 ½ tbsp of toasted sesame oil (or other cooking oil but sesame will give this a great depth of flavor)
1 lb of ground chicken (chicken is my go-to but feel free to try other ground meats instead!)
2-3 cups of chopped stir fry veggies (I usually do onion, bell pepper, broccoli, bok choy, and carrots)
3 stalks of green onions, chopped (save some for garnish)
1 package of noodles of choice (8-10oz)(I have used udon, ramen, and soba and all are delicious)
Combine all sauce ingredients together in a bowl and set aside.
Cut your veggies of choice.
Heat a large skillet over medium heat and add in your oil once hot.
Add your ground chicken to the skillet and cook until no longer pink.
Start heating your water in a pot for your noodles. Once boiling, add your noodles and cook according to the directions on the package. Drain and rinse with cold water.
Add your veggies to the skillet and stir until combined. Cover and reduce temperature to low while your noodles are cooking. Stir every few minutes and cook until vegetables are tender.
Add most of the green onions and about half of the sauce to the skillet. Stir and let cook for about 2 minutes and then add in your noodles and the rest of the sauce. Stir until sauce is thickened and coats the noodles.
Serve into bowls and garnish with the remaining green onions. I love to add sriracha to mine as well! Enjoy :)
